Flaounopita  
This is authentic Cypriot cheese & raisin loaf is a must for your Easter dinner table. To make this delicious loaf yourself, you’ll be able to get some of the special ingredients for the recipe from your nearest Bread Basket store.
 
   
Ingredients

7 Eggs
220ml Sunflower oil
3 Cups (375g) grated halloumi cheese
2 Tbls fresh mint or 2 tsp dried mint
2 Cups self-raising flour
½ Tsp Mastic
½ Tsp Mahlepi
1 Tsp sugar
3½ Tsp baking power
¾ Cup raisins
2 Tbls sesame seeds
 
 
1. Preheat the oven to 180º
2. Oil and dust two standard loaf tins (you can also use a muffin or mini loaf pan)
3. Mix mint with grated halloumi cheese
4. Crush mastic, mahlepi and sugar with a pestle and mortar
5. Sift flour with baking powder and to the flour, the mastic mahlepi and sugar ‘mix’
6. Beat eggs well and add the oil, halloumi cheese and flour to the beaten eggs
7. Mix together with a spoon
8. Dust the raisins with a little flour (to prevent them from sinking) and add to the mixture
9. Place mixture into ready prepared pans and sprinkle with sesame seeds
10. Bake for 40 minutes or until a knife comes out clean.
