Dough Ingredients
1kg Flour
1 cup Olive Oil or Sunflower Oil
1 cup Yoghurt Plain
2 Eggs
1 cup Sugar
1 tsp Baking Powder diluted in 3 Tbls Lemon Juice

Filling Ingredients:
1kg Ricotta Cheese
2 Egg Yolks
½ cup Sugar
3 Tbls Honey
1 tsp Cinnamon Ground

   
   
Method


1. Make the dough first. Mix Olive Oil in flour and rub well.

2. Add sugar, yoghurt, diluted baking powder and eggs.

3. Mix well to make a soft pliable dough. Let rest for about ½ hour.

4. In the meantime mix the filling by blending ricotta cheese with of the filling ingredients.

5. Roll pastry to about ½ cm thickness and 10cm rounds.

6. Place 1 full tablespoon of filling in the centre and close on top by pinching the pastry around.

7. Brush with egg and sprinkle with cinnamon.

8. Bake in 180~ for about 20 minutes.

Ingredients

7 eggs
220ml Sunflower oil
3 cups houloumi cheese - grated
2 tbls fresh mint or 2tsp dried mint
2 cups self raisign flower
1 1/2 tsp mastic
1 1/2 tsp mahelepi
1 tsp sugar
3 1/2 stsp baking powder
3/4 cup raising
2 tbls sesame seeds

Preheat over to 180 degrees.
Oil and dust two standard loaf tins (you can also use a muffin or mini loaf pan)
Mix mint into grated haloumi cheese.
Crush mastic, mahlepi and sugar in a pestle and mortar.
Sift four with baking poweder and then add hte masic mahlepin and sugar mix
Beat eggs f\very will, add oil haloumi cheese and flour to the beathen edd\\gg
Mix all together with a spoon
Lastly add the raisins (dust with a little four first, this helps to keep the raisins from sinking during baking).
Place mixture into ready prepared pans and sprinkle with sesame seeds.
Bake for about 40 minutes or until a knife comes out.
